Curried Lobster & Seafood Avocado Toast
Simple and healthy dish that is perfect for a quick and easy breakfast, lunch, or dinner idea. This recipe uses our rich and delicious Lobster Sensations® that is mixed with eggs. Then garnished with red pepper flakes and kosher salt.
|Lobster Egg Salad:|
|1/4||Pound||Lobster Sensations® (Item# 004610)|
|1||Tablespoon||Lemon Juice, Fresh|
|6||Each||Eggs, Hard Boiled|
|4||Slices||Whole Grain Bread|
|To Taste||Crushed Red Pepper Flakes|
|To Taste||Kosher Salt and Pepper|
- Lobster Egg Salad: Mix the mayo with all other ingredients. Fold in the Lobster Sensations® and chopped eggs and mix lightly. Season with salt and pepper.
- Avocado Toast: Mash the avocado with a fork, leaving chunky, and season with salt and pepper. Toast the bread, rub it with garlic, brush with olive oil and spread the avocado mixture onto the toast.
- Top the avocado toast with the lobster egg salad and garnish with red pepper flakes and kosher salt.
