Curried Lobster & Seafood Avocado Toast

Simple and healthy dish that is perfect for a quick and easy breakfast, lunch, or dinner idea. This recipe uses our rich and delicious Lobster Sensations® that is mixed with eggs. Then garnished with red pepper flakes and kosher salt.

Ingredients

Lobster Egg Salad:
1/4 Pound Lobster Sensations® (Item# 004610)
1/4 Cup Mayonnaise
1 Teaspoon Curry Powder
1/8 Teaspoon Celery Salt
1 Teaspoon Tabasco
3/4 Teaspoon Cumin
1 Teaspoon Dijon
1 Tablespoon Lemon Juice, Fresh
6 Each Eggs, Hard Boiled
1/4 Cup Celery, Diced
3 Each Scallions, Chopped
To Taste Salt
To Taste Pepper
Avocado Toast:
1 Each Avocado, Ripe
4 Slices Whole Grain Bread
1 Clove Garlic, Fresh
2 Tablespoons Olive Oil
To Taste Crushed Red Pepper Flakes
To Taste Kosher Salt and Pepper

Directions

  1. Lobster Egg Salad: Mix the mayo with all other ingredients. Fold in the Lobster Sensations® and chopped eggs and mix lightly. Season with salt and pepper.
  2. Avocado Toast: Mash the avocado with a fork, leaving chunky, and season with salt and pepper. Toast the bread, rub it with garlic, brush with olive oil and spread the avocado mixture onto the toast.
  3. Top the avocado toast with the lobster egg salad and garnish with red pepper flakes and kosher salt.
