Ingredients

2 Pieces Gourmet Lobster & Seafood Cake (Item# 057921)
1 Cup Zucchini Noodles
1 Piece Artichoke Heart, Quartered
3 Pieces Kalamata Olives, Pitted
1 Tablespoon Extra Virgin Olive Oil
1/8 Piece Julienne Red Onion
1/8 Cup Chickpeas
1/8 Cup Feta Cheese, Crumbled
1/2 Tablespoon Red Wine Vinegar
1/2 Teaspoon Fresh Lemon Juice
1/2 Teaspoon Fresh Oregano, Chopped
1/2 Teaspoon Fresh Parsley, Chopped
1/2 Each Garlic Clove, Minced
1/8 Teaspoon Dijon Mustard
3 Each Grape Tomatoes, Sliced

Directions

  1. Mix all zucchini salad ingredients (everything except Gourmet Lobster & Seafood Cakes) and let sit for 2 hours.
  2. Sauté the Gourmet Lobster & Seafood Cakes to 165°F internal temperature and arrange two on top of the salad.
