Gourmet Lobster Cake Mediterranean Zucchini Noodle Salad

Ingredients

2 pieces Gourmet Lobster & Seafood Cake
1 cup zucchini noodles
1 piece artichoke heart, quartered
3 pieces Kalamata olives, pitted
1 tablespoon extra virgin olive oil
1/8 piece julienne red onion
1/8 cup chickpeas
1/8 cup feta cheese, crumbled
1/2 tablespoon red wine vinegar
1/2 teaspoon fresh lemon juice
1/2 teaspoon fresh oregano, chopped
1/2 teaspoon fresh parsley, chopped
1/2 clove garlic, minced
1/8 teaspoon Dijon mustard
3 grape tomatoes, sliced
micro greens, garnish

Directions

  1. Mix all zucchini salad ingredients (everything except Gourmet Lobster & Seafood Cakes and micro greens) and let sit for 2 hours.
  2. Sauté the Gourmet Lobster & Seafood Cakes and arrange two on top of the salad.
  3. Garnish with a pinch of micro greens and serve.
