Jumbo Crab Quesadilla Benedict

Here’s a fusion remix that’ sure to create some buzz Try Jumbo Crab Sensations® inside a tortilla covered with a poached egg. Serve it at
brunch only if you have space to expand.

Ingredients

4 Ounces Jumbo Crab Sensations® (Item# 004630)
1/4 Cup Fire Roasted Salsa
2 Each Tortillas, Flour, 6 Inch
1/2 Cup Mexican Blend Cheese, Shredded
2 Each Eggs, Poached
1/4 Each Avocado, Sliced
2/3 Cup Chipotle Hollandaise
3 Tablespoons Fired Roasted Salsa Garnish
1 Each Scallions, Chopped

Directions

  1. Combine the Jumbo Crab Sensations®, ½ cup fire roasted salsa and the shredded cheese.
  2. Fill Each of the tortillas with ½ the mixture, fold and toast them on a flat top of sauté pan till golden and the cheese is melted.
  3. Make the hollandaise by combining your favorite hollandaise recipe with 2 tablespoons of pureed chipotle in adobo.
  4. Arrange the Jumbo Crab Sensations® quesadillas on a plate. Top each one with a poached egg, spoon over the hollandaise and garnish with fire roasted salsa and chopped scallions.
