Lemon Chive Butter
|1||each||shallot, fine dice|
|3||each||chives, chopped fine|
|1/2||each||fresh lemon juice|
|kosher salt to taste|
|fresh ground black pepper to taste|
- Reduce wine and shallots in a pan till almost dry.
- Add cream and reduce by 2/3.
- Slowly whisk in the butter till creamy and smooth on low heat.
- Add lemon juice and adjust seasoning.
- Strain and add in the chopped chives.
