Lobster and Seafood Enchilada

Ingredients

3ouncesLobster Sensations®
1/2cuponion, chopped fine
1teaspoonjalapeño, seeded and chopped fine
1teaspoonsweet butter
1teaspoongarlic, minced
1teaspoonchili powder
1teaspoonground cumin
1cupMonterey jack cheese, shredded
1/2cupfresh cilantro, minced
36-inchcorn or flour tortillas
enchilada sauce, as needed
3tablespoonssour cream
3sprigscilantro
salt and pepper to taste

Directions

  1. Into a sauté pan add the butter and melt, add in the onion, lobster, jalapeño and garlic and sauté until soft.
  2. Add in the cumin, chili powder salt and pepper and sauté another minute to incorporate all ingredients well.
  3. Warm up the tortillas (3) and then into each one place a third of the mixture and sprinkle cilantro across each one then roll.
  4. Place onto a plate and top with sauce and shredded cheese and broil until the cheese is melted.
  5. Garnish with sour cream and fresh cilantro sprig.
