Lobster & Seafood Mac & Cheese

|1/3||Cup||Flour, All Purpose|
|1 3/4||Pounds||Sharp Cheddar Cheese|
|To Taste||Salt, Kosher|
|To Taste||Pepper, Fresh Ground|
- In a large pot boil water and salt. Add the pasta and cook till al dente. Drain Well.
- In a medium sauce pot, melt the butter at medium heat and add the flour to make a smooth textured mix. Slowly add the milk whisking constantly till creamy and thick.
- Whisk 1 1/2 pounds of cheese till creamy and the cheese is totally melted.
- Season with salt and pepper.
- Fold all ingredients together, top with the remaining cheese and bake at 375° F in a lightly greased casserole dish till golden.
