1PoundsPasta, Elbow
5TablespoonsButter, Unsalted
1/3CupFlour, All Purpose
1QuartWhole Milk
1 3/4PoundsSharp Cheddar Cheese
To TasteSalt, Kosher
To TastePepper, Fresh Ground


  1. In a large pot boil water and salt. Add the pasta and cook till al dente. Drain Well.
  2. In a medium sauce pot, melt the butter at medium heat and add the flour to make a smooth textured mix. Slowly add the milk whisking constantly till creamy and thick.
  3. Whisk 1 1/2 pounds of cheese till creamy and the cheese is totally melted.
  4. Season with salt and pepper.
  5. Fold all ingredients together, top with the remaining cheese and bake at 375° F in a lightly greased casserole dish till golden.
