Shrimp Saltimbocca Pasta

2poundscavatappi pasta, cooked
2poundsolive oil
1eachyellow onion, julienned
3ouncesprosciutto, thin sliced
8leavesfresh chopped sage
1eachtomato, diced
4ounceswhite wine
12ounceschicken stock
4ouncesParmesan cheese, finely shredded
Kosher salt to taste
fresh ground pepper to taste


  1. In a large saute pan heat the olive oil, add onions and cook till golden.
  2. Add the shrimp sensations and prosciutto and saute for 30 seconds.
  3. Deglaze the pan with white wine and reduce by half.
  4. Add the chicken stock and reduce by half.
  5. Swirl in the butter; add the sage and tomatoes.
  6. Add the pasta and toss all ingredients together.
  7. Season with salt and pepper.
  8. Garnish with finely shredded cheese and serve.
